I am participating in the PPK cookbook challenge and just counted up that I've made 29 new dishes in the last four weeks. That is more than in my first 29 years of life. This challenge is awesome. I'm purposefully picking out things I've been too lazy or afraid to make. My favorite so far? Definitely the Crispy Beer Battered Seitan from Yellow Rose Recipes by Joanna Vaught, although the Swiss Chard Fritatta from Vegan Brunch by Isa Chandra Moskowitz is a close second.
Here's the seitan with collard greens and mashed potatoes with mushroom gravy. We ate the seitan for lunches the next few days on buns with lettuce and tomato. So good. Six more weeks of challenge. If I keep up this pace it would mean 43 more new concoctions or 72 total.
