Breakfast Comfort Food for Dinner

This week the challenge is to make at least three new things from eat, drink, and be vegan by Dreena Burton. Last night it was Olive Oyl Pasta. Tonight it was Tempeh Hashbrown Casserole. Holy crap, you guys. This was really good. The tempeh is simmered in broth with a bay leaf and then marinated in tamari and apple cider vinegar. That, along with the herb combination of rosemary and thyme makes this potato dish taste like Thanksgiving stuffing. It isn't very photogenic, but I loved it too much not to share.

Birthday Food

Living in the ass end of nowhere makes choosing where to have birthday food difficult. On a regular day picking a restaurant is agonizing. Bean burritos, again? Chinese, again? Or, oh wait, another veggie sandwich. Right on.

So for my birthday dinner I took a different approach, I made exactly what I wanted to eat: spinach pasta loaded with garlic, tomatoes, and olives; broiled asparagus; and roasted garlic bread (the latter not made by me). We had So Delicious Creamy Fudge popsicles for dessert. I was glad I got them, since while I was at the store JaneDog ate the chocolate chip cookies I made with Ben yesterday.

29 New Dishes

I am participating in the PPK cookbook challenge and just counted up that I've made 29 new dishes in the last four weeks. That is more than in my first 29 years of life. This challenge is awesome. I'm purposefully picking out things I've been too lazy or afraid to make. My favorite so far? Definitely the Crispy Beer Battered Seitan from Yellow Rose Recipes by Joanna Vaught, although the Swiss Chard Fritatta from Vegan Brunch by Isa Chandra Moskowitz is a close second.

Here's the seitan with collard greens and mashed potatoes with mushroom gravy. We ate the seitan for lunches the next few days on buns with lettuce and tomato. So good. Six more weeks of challenge. If I keep up this pace it would mean 43 more new concoctions or 72 total.
